Layered Hummus Dip

Ingredients
  

  • 1 10 ounce container hummus
  • 1/2 cup tzatziki
  • 1 tomato, seeded and chopped fine
  • 1/4 English cucumber, peeled and chopped fine
  • 1/3 cup crumbled feta cheese
  • 1/4 cup finely chopped Kalamata olives
  • 2 green onions, chopped fine
  • 2 TB finely chopped fresh parsley
  • Pita chips (recipe below) and crudites for serving

Instructions
 

  • Spread hummus in a smooth layer in the bottom of an 8"x 8" square baking dish. Dollop tzatziki by small spoonfuls over the top, then gently spread to create a new layer.
  • Sprinkle tomato, cucumber, feta, olives and green onion over the top. Sprinkle with fresh parsley. Cover and refrigerate until ready to serve. Serve with pita chips and crudites.

Here’s how to make homemade pita bread chips: Preheat oven to 350 degrees Fahrenheit. Cut pita bread in half and cut each half into 3 or 4 triangles. Separate each triangle so that each piece is a single layer. Arrange the triangles on a baking sheet. Brush the inside of each triangle with olive oil. Sprinkle triangles lightly with Greek seasoning. Bake pita triangles for 7 – 10 minutes or until they are golden and toasty. (Watch carefully so the pita triangles don’t burn.)

Herb Dipping Oil

Prep Time 5 minutes
Course Appetizer
Servings 8 tablespoons

Ingredients
  

  • 1 TB crushed red pepper flakes
  • 1 TB black pepper
  • 1 TB dried oregano
  • 1 TB dried rosemary
  • 1 TB dried basil
  • 1 TB dried parsley
  • 1 TB garlic powder
  • 1 small clove garlic, crushed
  • 1 tsp salt
  • Extra virgin olive oil for serving

Instructions
 

  • Place all ingredients in a mortar and pestle. Grind ingredients together with pestle.
  • Place one tablespoon of spice mixture in a shallow bowl. Pour extra virgin olive oil over the mixture and stir gently.
  • Serve with toasted pita bread chips.
