Equipment
- 1 cocktail muddler
- 1 Riedel highball glass
Ingredients
- 4 – 6 fresh spearmint leaves
- ice to fill highball glass
- 2 ounces Empress 1908 Gin
- 1 ounce fresh lime juice
- 1/2 ounce simple syrup
- 1/2 ounce ginger syrup
- fresh mint sprig and lime wheel for garnish
Instructions
- Place mint leaves in highball glass. Muddle mint with cocktail muddler (may also use back of a spoon)
- Add ice to glass.
- Add gin, lime juice, simple syrup and ginger syrup to glass. Stir with long handled or bar spoon.
- Garnish with mint sprig and lime wheel.
Ginger Simple Syrup

Ingredients
- 1 cup sugar
- 1 cup water
- 1/4 cup peeled, sliced fresh ginger
Instructions
- Place ginger, water and sugar in a small saucepan. Stir.
- Bring to a simmer over medium heat, then reduce heat to low and allow to steep for 15 minutes.
- Remove from heat. Cover. Allow to sit for 1 hour. Strain ginger out of syrup and pour syrup into a mason jar. Cover jar and refrigerate until service.
