Ginger Simple Syrup

- 1 cup sugar
- 1 cup water
- 1/4 cup peeled, sliced fresh ginger
Place ginger, water and sugar in a small saucepan. Stir.
Bring to a simmer over medium heat, then reduce heat to low and allow to steep for 15 minutes.
Remove from heat. Cover. Allow to sit for 1 hour. Strain ginger out of syrup and pour syrup into a mason jar. Cover jar and refrigerate until service.
