Angel Hair Pasta al Limone (creamy lemony angel hair pasta)

Possibly THE BEST pasta dish I have ever made…the perfect entree for a summer supper, side dish with Italian grilled chicken and green salad. And if you have some left over, it is equally as yummy the next day, just top with a pat of butter and heat in the microwave.

Sicilian Lemon Olive Oil is the secret to making this pasta dish POP with lemon flavor. I am enjoying Olivelle Olive Oil that is sold locally at Wine Gourmet in Roanoke, Virginia and on-line.

Ingredients
  

  • 8 ounces "pot ready" angel hair pasta pot ready pasta is pasta that is cut to fit in your pot.
  • 2 teaspoons salt
  • 1/4 cup butter
  • 2 garlic cloves, peeled and minced
  • 1 shallot, peeled and minced about 1/3 cup
  • 3 tablespoons Olivelle Sicilian Lemon Olive Oil
  • zest 1 large lemon
  • juice 1 large lemon
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup half and half
  • 1/2 cup grated Parmesan cheese
  • garnish: thinly chopped green onions, freshly ground black pepper, lemon zest and grated parmesan cheese
  • Olivelle Sicilian Lemon Olive Oil for drizzling

Instructions
 

  • Place oven-proof pasta bowls in warm oven to warm while preparing pasta. Fill pasta pot with water and add 2 teaspoons salt. Bring water to a boil.
  • Fill pasta pot with water and add 2 teaspoons salt. Bring water to a boil.
  • Reduce heat to medium and cook pasta until it is al dente, about 7 minutes.
  • Drain water off pasta and set aside pasta.
  • Place 1/4 cup butter in a frying pan. Melt butter over medium heat.
  • Add garlic and shallots to melted butter and stir. Cook over medium heat until garlic is beginning to turn lightly brown and shallots are translucent. Reduce heat to medium low.
  • Add lemon olive oil, stir.
  • Add lemon zest, lemon juice, sugar and 1 teaspoon salt.
  • Stir in heavy cream and add pasta. Toss the pasta with tongs.
  • Add grated parmesan and toss pasta with tongs.
  • Place pasta in warmed serving bowls. Garnish with green onion, black pepper, Parmesan cheese and lemon zest. Drizzle with Olivelle Sicilian Olive Oil. Serve immediately.
