This is one of my favorite summer recipes. Roasted Garlic and Cracked Black Pepper Pork Loin & Mango Salsa is easy and quick to prepare and is full of fabulous summer flavors. You can grill the pork or roast it in the oven. It is perfect for a casual dinner party. You can add extra jalapeno to the salsa if you like extra spicy. Enjoy!
Roasted Pork & Mango Salsa

Ingredients
- 1 18 ounce Smithfield cracker black pepper and roasted garlic pork loin
- 4 ripe mangos, peeled, pitted and cut into 1/2 inch pieces
- 1 small red onion, finely chopped
- 1 small jalapeno, finely chopped
- 1/2 cup coarsely chopped cilantro
- 2 tablespoons fresh lime juice
- 1 teaspoon salt
- 2 tablespoons honey
Instructions
- Roast or grill pork loin according to package directions. While pork is cooking, prepare mango salsa.
- Place mango, red onion, jalapeno, cilantro, lime juice and honey in a bowl.
- Stir salsa and sprinkle with salt. Toss to combine all ingredients. Taste and adjust honey and salt as needed.
- Cover and chill in refrigerator until ready to serve.
- To serve, slice pork to desired thickness, place several slices on each serving plate and top with mango salsa.
