Sparkling Pear Prosecco Cocktail

I love the flavor of fresh pear in cocktails. It is difficult however to find pears that are perfectly ripe. So I often use Asian pears for my cocktails because I can find ripe ones at local Asian markets. Here’s one of my favorite sparkling pear cocktail recipes:

Sparkling Pear Prosecco Cocktail

Servings 6 cocktails

Ingredients
  

  • 1/2 cup water
  • 1/2 cup peeled and cored ripe pear, finely chopped or Asian pear
  • 1/3 cup sugar
  • 1/4 cup (2 ounces) pear liqueur
  • 6 thin pear slices (or Asian pear)
  • 1 750-millimeter bottle chilled Prosecco

Instructions
 

  • To make pear simple syrup: Combine water, chopped pear and sugar in a small saucepan. Bring to a boil over high heat. Reduce heat to low and simmer 5 minutes. Remove from heat and allow to stand 10 minutes.
  • Pour syrup through a fine mesh sieve into a small bowl; discard solids. Stir liqueur into syrup. Place pear slices (to be used as garnish) in syrup to keep them from turning brown.
  • Divide syrup evenly between 6 champagne flutes. Place 1 pear slice in each flute and top with prosecco.
