Fresh Summer Salsa

I love my fresh salsa recipe because you can adjust the seasonings to your specific taste. If you like spicy, add a little more jalapeno pepper. Love cilantro? Add more. If you like your salsa a little sweeter add a bit more honey. Have fun with it!

Fresh Summer Salsa

Ingredients
  

  • 12 yellow cherry tomatoes
  • 6 red cherry tomatoes
  • 14.5 ounce can petite diced tomatoes
  • 1/4 cup onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1 clove garlic, minced
  • 2 tablespoons fresh lime juice
  • 2 teaspoons honey, divided
  • 1/4 teaspoon ground cumin
  • 1 teaspoon finely chopped jalapeno pepper
  • 2 tablespoons finely chopped fresh cilantro
  • 1/4 teaspoon salt
  • Tortilla chips for serving

Instructions
 

  • Chop the cherry tomatoes into very small pieces. Place in a mixing bowl.
  • Place the petite diced tomatoes in a strainer and strain as much liquid as possible off of the tomatoes (press the tomatoes down with a large spoon to help squeeze out the liquid). Add the tomatoes to the cherry tomatoes in the bowl.
  • Add the onion, red bell pepper, garlic, lime juice, 1 teaspoon honey, cumin, jalapeno pepper, cilantro and salt to the tomatoes.
  • Stir to combine all ingredients. Taste and adjust seasonings to your taste (add more jalapeno pepper if you like spicy and 1 more teaspoon honey if you like your salsa a little sweeter).
  • Cover and place in the refrigerator.
  • Right before serving, pour out any liquid that is at the bottom of the bowl. As the salsa sits in the refrigerator, excess liquid from the tomatoes will collect in the bowl.
  • Serve with tortilla chips.
