Fancy Chex Mix

I love Chex Mix, but I don’t love some of the ingredients, so I came up with my Fancy Chex Mix recipe with only ingredients that I love. You are welcome to substitute with ingredients that you like (just substitute cup for cup so that you will have the right amount of seasoning for your Chex mix). Baby Goldfish crackers, roasted and salted Pepitas (pumpkin seeds), dry roasted peanuts or sunflower seeds, and tiny pretzels are just a few suggestions for your fancy Chex mix.

Cook Time 6 minutes

Servings 10 cups

Equipment

  • 1 large microwaveable bowl
  • 1 small microwaveable bowl

Ingredients
  

  • 4 cups Rice Chex (or a mixture of Rice, Corn and Wheat Chex – which ever flavor is your favorite)
  • 2 cups fancy salted mixed nuts (pecans, macadamia nuts, cashews, almonds)
  • 1 cup roasted and salted pistachios
  • 2 cups mini Cheetos
  • 6 tablespoons butter
  • 2 tablespoons Worcestershire sauce
  • 1 1/2 teaspoons seasoned salt (I like Jane's Krazy Mixed Up Salt)
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions
 

  • In a large microwaveable bowl, mix cereal, nuts and mini Cheetos; set aside.
  • In a small microwaveable bowl, microwave butter on high for about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.
  • Microwave mixture uncovered on high for 5 to 6 minutes, thoroughly stirring every 2 minutes. Allow to cool and store in an airtight container.
