Fresh Tomato Panzanella Salad

Panzanella is a rustic Italian chopped salad that features Italian bread cubes soaked in red vinegar salad dressing with fresh garden tomatoes, basil and garlic. From there you can add Mozzarella or Burrata cheese, Kalamata olives, red bell pepper, and/or grilled shrimp.
Homemade Thousand Island Dressing

Ever since I was a child, Thousand Island was my favorite salad dressing. It’s easy to make and I recently found this fabulous recipe in the Bridal Edition of the Betty Crocker Cookbook. It calls for pimiento stuffed green olives in place of the pickle relish. YUM!
Winter Citrus Salad with Poppy Seed Dressing

This is my favorite salad when it’s cold outside and I need something sunny on my dinner table.
Green Goddess Dressing

One of my favorite salad dressings (sandwich spread, roasted chicken sauce) is Green Goddess. It is full of herb, lemon and garlic flavors. I make my Green Goddess Dressing in the blender – super easy – and store it in a mason jar in the refrigerator so it’s always ready to top a green salad, […]
Mediterranean Couscous Salad

Summers in Virginia can be super hot. That’s when it’s just to hot to cook and I look for easy breezy recipes that do not require turning on my oven. One of my favorite “cool” recipes is Mediterranean Couscous Salad.
Cucumber Salad with Sour Cream Dill Dressing

The perfect summer salad. Crisp English cucumber with red onion and French radishes. If you cannot find French radishes at your local farmers market, you can substitute traditional radishes sliced thinly on a mandoline.

My Summer Peach Balsamic Vinaigrette is the perfect dressing for grilled peach salad or a bibb lettuce salad (bibb lettuce mixed with thinly sliced radishes, cucumber and crumbled goat or feta cheese, with a few toasted pistachios on top).
Cantaloupe Prosciutto Salad with Vine-ripened Raspberry Balsamic Glaze

Enjoy this refreshing flavorful salad when melon and peaches are in their peak season. The melon and peaches have fresh fruity flavor while the prosciutto adds a touch of salt along with a bit of sweetness from the balsamic vinegar. The raspberry balsamic glaze is much lighter than the heavy traditional balsamic glaze and it’s […]
Baby Bok Choy Salad with Ramen Noodle Almond Crunchy Topping

One of my all time favorite salads! So crunchy with delightful Asian flavors. Great salad for a dinner party or a light summer supper.

One of my favorite ways to serve them is my Tuscan Herb Ranch Tomatoes which also highlights the fabulous flavors of fresh herbs from my garden. The tomatoes need to chill in the refrigerator for 4 hours, which […]
