Another fun use for my Le Creuset Brasier Pan…Focaccia Bread!

Equipment
- 1 cast iron Brasier Pan I use a Le Cresuet Brasier Pan
Ingredients
- 2 cups bread flour
- 1 teaspoon salt
- 1 tablespoon olive oil, plus more for coating pan and drizzling I use Olivelle sweet butter infused olive oil
- 1 teaspoon instant yeast
- 1 cup warm water
- 3 sprigs fresh rosemary
- 2 teaspoons flaky sea salt
Instructions
- Place the yeast in the warm water, stir.
- In a large mixing bowl, mix together the water mixed with yeast, flour and olive oil.
- Add the salt and mix until the dough comes together in a ball.
- Coat the top of the dough with a thin layer of olive oil and cover with a tea towel.
- Place the dough in a warm place and let rise for 2 hours.
- Preheat the oven to 425 degrees Fahrenheit.
- Once the dough has risen, place it into a well-oiled cast iron brasier pan or a baking pan with high sides.
- Cover with a damp towel or plastic wrap and put in a warm place to let rise in the pan for another 30 minutes.
- Once the dough is ready, coat your fingers with olive oil and gently dimple the top of the dough to create small wells with your fingers.
- Drizzle the dough generously with more olive oil, rosemary and sprinkle with flaky sea salt.
- Place in the oven and bake for 20 – 25 minutes or until lightly golden brown.
