Meghan Markle's Focaccia Bread

Course Bread and Biscuits
- 2 cups bread flour
- 1 teaspoon salt
- 1 tablespoon olive oil, plus more for coating pan and drizzling I use Olivelle sweet butter infused olive oil
- 1 teaspoon instant yeast
- 1 cup warm water
- 3 sprigs fresh rosemary
- 2 teaspoons flaky sea salt
Place the yeast in the warm water, stir.
In a large mixing bowl, mix together the water mixed with yeast, flour and olive oil.
Add the salt and mix until the dough comes together in a ball.
Coat the top of the dough with a thin layer of olive oil and cover with a tea towel.
Place the dough in a warm place and let rise for 2 hours.
Preheat the oven to 425 degrees Fahrenheit.
Once the dough has risen, place it into a well-oiled cast iron brasier pan or a baking pan with high sides.
Cover with a damp towel or plastic wrap and put in a warm place to let rise in the pan for another 30 minutes.
Once the dough is ready, coat your fingers with olive oil and gently dimple the top of the dough to create small wells with your fingers.
Drizzle the dough generously with more olive oil, rosemary and sprinkle with flaky sea salt.
Place in the oven and bake for 20 - 25 minutes or until lightly golden brown.
