Summer Peach Balsamic Vinaigrette

My Summer Peach Balsamic Vinaigrette is the perfect dressing for grilled peach salad or a bibb lettuce salad (bibb lettuce mixed with thinly sliced radishes, cucumber and crumbled goat or feta cheese, with a few toasted pistachios on top).

Equipment

  • 1 Blender

Ingredients
  

  • 1 heaping tablespoon finely chopped shallots
  • 2 ripe peaches, peeled and pitted, chopped
  • 2 tablespoons peach preserves
  • 1 tablespoon Olivelle Summer Peach Balsamic Vinegar
  • 2 teaspoons Olivelle Summer Peach Balsamic Vinegar
  • 3/4 cup Sunflower oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • pinch cayenne pepper
  • 1/2 teaspoon herbs de provence

Instructions
 

  • Place shallot, peaches, peach preserves, peach balsamic vinegar and 1/4 cup sunflower oil in blender container. Cover and blend until pureed.
  • Remove center top of blender top and drizzle in the rest of the sunflower oil while running the blender on low speed.
  • Replace center top of blender top.
  • Add pepper, salt, cayenne pepper and herbs de provence. Cover and blend to combine ingredients.
  • Place vinaigrette in mason jar and cover. Refrigerate until ready to serve.
