My Summer Peach Balsamic Vinaigrette is the perfect dressing for grilled peach salad or a bibb lettuce salad (bibb lettuce mixed with thinly sliced radishes, cucumber and crumbled goat or feta cheese, with a few toasted pistachios on top).

Ingredients
- 1 heaping tablespoon finely chopped shallots
- 2 ripe peaches, peeled and pitted, chopped
- 2 tablespoons peach preserves
- 1 tablespoon Olivelle Summer Peach Balsamic Vinegar
- 2 teaspoons Olivelle Summer Peach Balsamic Vinegar
- 3/4 cup Sunflower oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- pinch cayenne pepper
- 1/2 teaspoon herbs de provence
Instructions
- Place shallot, peaches, peach preserves, peach balsamic vinegar and 1/4 cup sunflower oil in blender container. Cover and blend until pureed.
- Remove center top of blender top and drizzle in the rest of the sunflower oil while running the blender on low speed.
- Replace center top of blender top.
- Add pepper, salt, cayenne pepper and herbs de provence. Cover and blend to combine ingredients.
- Place vinaigrette in mason jar and cover. Refrigerate until ready to serve.
