Summer Peach Balsamic Vinaigrette
Serve with grilled peach salad or bibb lettuce salad (radishes & cucumbers & crumbled goat cheese)

- 1 heaping tablespoon finely chopped shallots
- 2 ripe peaches, peeled and pitted, chopped
- 2 tablespoons peach preserves
- 1 tablespoon Olivelle Summer Peach Balsamic Vinegar
- 2 teaspoons Olivelle Summer Peach Balsamic Vinegar
- 3/4 cup Sunflower oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- pinch cayenne pepper
- 1/2 teaspoon herbs de provence
Place shallot, peaches, peach preserves, peach balsamic vinegar and 1/4 cup sunflower oil in blender container. Cover and blend until pureed.
Remove center top of blender top and drizzle in the rest of the sunflower oil while running the blender on low speed.
Replace center top of blender top.
Add pepper, salt, cayenne pepper and herbs de provence. Cover and blend to combine ingredients.
Place vinaigrette in mason jar and cover. Refrigerate until ready to serve.
