When I was growing up in Roanoke, Virginia, my mother would take my brother and me to the Miller and Rhoads tearoom in downtown Roanoke. The Missouri Club Sandwich was always my favorite. A traditional club sandwich smothered in a luscious cheddar cheese sauce.

Ingredients
- 2 slices white bread, toasted
- turkey breast sandwich meat
- Virginia or baked ham, sliced
- 2 slices tomato
- 2 slices crisp bacon
- mayonnaise
- cheese sauce (recipe below)
- 1 slice sharp Cheddar cheese
- 1 cup cold milk
- 1 tablespoon corn starch
- 1 tablespoons butter
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup sharp Cheddar cheese, grated
- 1 teaspoon Worcestershire sauce
- bread and butter pickles
Instructions
- Make cheese sauce: In a small saucepan, gradually stir cornstarch into milk until smooth. Add butter, salt and pepper. Stirring constantly, bring to a boil over medium-low heat, boil 1 minute. Reduce heat to low and stir in cheese until melted. Add Worcestershire sauce and stir. (Enough for 2 sandwiches) Keep warm on stovetop while making sandwiches.
- Make sandwich: Layer on oven proof plate. One slice toast/turkey/ham/tomato slices/bacon and remaining toast slice spread with mayonnaise (mayonnaise side down). Drizzle sandwich with cheese sauce. Top with cheese slice. Run under broiler until cheese melts and is lightly browned and bubbly hot. Serve with bread and butter pickles on the side.
