Cucumber Salad with Sour Cream Dill Dressing

The perfect summer salad. Crisp English cucumber with red onion and French radishes. If you cannot find French radishes at your local farmers market, you can substitute traditional radishes sliced thinly on a mandoline.

Cucumber Salad with Sour Cream Dill Dressing

Equipment

  • 1 Mandoline slicer or grater with a mandoline attachment

Ingredients
  

  • 2 English cucumbers, peeled and sliced on a mandoline.
  • 12 French radishes, sliced very thin optional
  • 2 tablespoons Olivelle Cucumber Balsamic Vinegar
  • 1/2 cup sour cream
  • 1/3 cup finely chopped red onion
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon sugar
  • 1 ounce fresh dill, finely chopped
  • 2 teaspoons Olivelle Mojo Citrus Seasoning Salt, ground
  • 2 teaspoons Olivelle Feta and Herb Dipper and Seasoning

Instructions
 

  • Place cucumber balsamic vinegar, sour cream, salt, pepper, sugar, dill, mojo citrus seasoning salt and feta and herb dipper and seasoning in a bowl. Stir to combine.
  • Place cucumbers and red onion in a bowl. Add French radishes if using. Stir.
  • Pour sour cream dressing over the cucumbers and red onion. Stir to coat the cucumbers and red onion with the dressing.
  • Cover bowl and chill for at least one hour before serving. Salad is best served within a few hours of preparation.
