Chocolate Truffles

Perfect ending for a cocktail party. Easy to make ahead of time.

Chocolate Truffles

Ingredients
  

  • 8 ounces 70 % cocoa chocolate chips I like Ghirardelli brand chocolate for this recipe
  • 2/3 cup heavy cream
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • cocoa powder
  • chopped pecans, finely grated dark or white chocolate and coconut flakes for rolling truffles

Instructions
 

  • Place the chocolate in a mixing bowl.
  • Lightly boil the cream and pour it over the chocolate. Let it stand for a few minutes without stirring.
  • Add the butter in small pieces and mix gently to a smooth cream.
  • Cover the mixing bowl and place in refrigerator until the mixture is thickened and set – about 4 hours.
  • Dip a spoonful of truffle in the cocoa powder – so it does not stick to your hands – and roll into a ball. Roll the truffles in the cocoa powder or in chopped nuts, grated chocolate or coconut. Dust you hands lightly with cocoa powder as you are rolling the truffles so they do not stick to your hands.
