White Chicken Chili - secret ingredient - Boursin Herb and Garlic Cheese

- 1 pound ground chicken
- 2 tablespoons olive oil
- .98 ounce package Kinder's White Chicken Chili Seasoning Mix
- 15.5 ounce can cannellini beans, drained and rinsed
- 16 ounce can light red kidney beans, drained and rinsed
- 16 ounces chicken stock
- 5.3 ounce package Boursin herb and garlic cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons chopped fresh dill
- 1/2 cup sour cream
- Optional toppings: shredded sharp cheddar cheese, thinly slice green onions, fresh corn off the cob, tortilla chips, fresh avocado
- Serve with a scoop of jasmine rice in center of bowl of white chicken chili and top with toppings of your choice.
Place olive oil in large frying pan. Heat over medium heat until hot. Add ground chicken. Cook and stir, breaking up pieces of ground chicken until chicken is cooked (about 7 minutes).
Add white chicken chili seasoning to the chicken. Continue to heat over medium-low heat. Stir.
Add cannellini beans and light red kidney beans. Stir.
Add chicken stock. Stir.
Add Boursin cheese, breaking cheese into pieces with a large spoon. Stir.
Add salt and pepper, dill and sour cream. Stir.
Continue to heat over medium-low heat for 10 minutes, stirring occasionally.
Serve chili warm in large soup bowls, with toppings of your choice.
