- 3 tablespoons butter
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs
- 1 1/4 cup shredded Gruyere cheese
- 1 egg mixed with 1 tablespoon water for brushing
- 1/4 cup shredded Gruyere cheese for topping
- 1/16 teaspoon cayenne pepper
Instructions
- Preheat oven to 425 degrees Fahrenheit. Line a baking sheet (with sides) with parchment paper.
- Place water and butter in a saucepan over medium heat. Bring to a boil until butter is melted.
- Remove from stove, add flour, salt and pepper and cayenne pepper. Mix until incorporated.
- Return to stove on low heat and mix for 1 minute.
- Remove from stove and allow to sit for 2 minutes.
- Add 1 egg and mix vigorously until incorporated. Batter will split at first but it will come together. Add the remaining egg and mix until incorporated.
- Stir in 1 1/4 cups of Gruyere cheese.
- Use a cookie scoop to drop tablespoon size scoops of batter onto the cookie tray. Brush with egg wash and sprinkle with shredded Gruyere cheese (press cheese into the gougeres a little bit with your fingers).
- Bake for 20 minutes, or until golden brown. Watch carefully while baking, to avoid burning.
