Frozen Mango Margarita

Frozen fruit margaritas are a favorite at my summer soirees. Fresh mango flavor gives my margaritas a fruity kick.

Frozen Mango Margarita

Equipment

  • 1 Blender
  • 2 margarita glasses
  • 1 mason jar
  • 1 large cube ice cube tray (each cube should hold 7 tablespoons liquid)

Ingredients
  

  • 1 fresh ripe mango, peeled and pit removed, cut into chunks
  • 1 cup frozen mango chunks
  • 1/2 cup mango nectar I like Jumex Mango Nectar for this recipe – available at Kroger
  • margarita salt
  • 1 large lime wedge
  • 3 tablespoons fresh lime juice
  • 6 frozen mango cubes (recipe below)
  • 4 ounces tequila blanco
  • 1 1/2 ounces simple syrup
  • Garnish: lime wheel

Instructions
 

  • To make frozen mango cubes: Place fresh mango cubes, frozen mango cubes and mango nectar in a blender container. Cover and blend until mango is pureed.
  • Pour mango puree evenly into the ice cube tray, filling 7 of the cubes. Freeze overnight.
  • To make margaritas: Rub the rims of two margarita glasses with lime wedge. Dip the glasses upside down in the margarita salt to rim the glasses. Place martini glasses in freezer for 30 minutes to chill.
  • Place lime juice, 6 frozen mango cubes, tequila blanco and simple syrup in blender. Blend until the frozen mango cubes are slushy and blended with the other ingredients.
  • Pour mango margaritas into chilled margarita glasses. Garnish with lime wheel. If you are not serving the margaritas immediately, pour the mango margarita into a mason jar, cover and freeze until service.
