Roasted Pork & Mango Salsa

- 1 18 ounce Smithfield cracker black pepper and roasted garlic pork loin
- 4 ripe mangos, peeled, pitted and cut into 1/2 inch pieces
- 1 small red onion, finely chopped
- 1 small jalapeno, finely chopped
- 1/2 cup coarsely chopped cilantro
- 2 tablespoons fresh lime juice
- 1 teaspoon salt
- 2 tablespoons honey
Roast or grill pork loin according to package directions. While pork is cooking, prepare mango salsa.
Place mango, red onion, jalapeno, cilantro, lime juice and honey in a bowl.
Stir salsa and sprinkle with salt. Toss to combine all ingredients. Taste and adjust honey and salt as needed.
Cover and chill in refrigerator until ready to serve.
To serve, slice pork to desired thickness, place several slices on each serving plate and top with mango salsa.
